If you’re anything like me, summer means the zucchini situation gets a little out of hand. You plant one or two in the garden, and suddenly you’re giving bags of them to the neighbors, sneaking them into every meal, and wondering if the squash will ever stop.

This low-carb ground beef zucchini casserole has become my answer to that problem, and honestly, it’s good enough that I’d make it even when zucchini isn’t taking over my garden.

It’s hearty and cheesy, and it hits all the Italian-seasoned comfort-food notes without the pasta. For those of us eating low carb, this kind of dish is a lifesaver on busy weeknights when you need something satisfying that doesn’t take forever.

The One Step You Cannot Skip

Before you do anything else, you need to salt your zucchini after you slice it. I know it sounds like an extra step you could probably skip. But you can’t. Zucchini holds an impressive amount of water, and when it hits the heat of the oven, it releases all of it right into your casserole. Skip the salting step, and you’ll end up with something soupy instead of something that slices cleanly.

Here’s how I do this process. Slice the zucchini into half-inch rounds, lay them on paper towels or cotton kitchen towels, sprinkle generously with salt, and let them sit for 15 minutes. Pat them dry with another paper or kitchen towel to get the extra salt off. That’s it. The difference it makes in the final texture is completely worth the time.

Why This Casserole Works So Well

The genius of this recipe is in the layers. Ground beef and low-sugar spaghetti sauce make a simple, savory sauce. My choice of jar sauce is Rao’s. Sliced zucchini gives you that body and texture you’d normally get from noodles. And then there’s the mozzarella that’s melted through every layer and golden on top. It’s basically a low-carb lasagna situation, and nobody at the table is going to miss the pasta.

Brown your ground beef with diced onions and chopped mushrooms, if desired. Zucchini rounds have been added on top of that beef mixture, still in the same pan. Add some summer corn if desired, and cook everything down into a thick, seasoned mixture. Transfer into a baking dish that already has a layer of zucchini slices and red tomato sauce. Top with cheese and bake.

Baking in a 9×13 dish also makes it a solid meal prep option for the week for several people. For just myself, I will split it up into these foil pans with lids. Eat one, give one away, or put one in the freezer for later.

One of the things I really appreciate about this casserole is how you can make this ahead of time. Cook the meat sauce a day or two in advance and keep it in the fridge, and you can slice and salt the zucchini ahead of time as well. Just hold off on putting everything together until you’re ready to bake, and assembling it too far in advance can lead to extra moisture building up in the dish. When you’re ready, layer it up, pop it in the oven, and dinner is done in under 30 minutes. That kind of flexibility makes it a great option for busy weeks when you want something home-cooked without starting from scratch every night.

What to Serve With It

This is filling enough to stand on its own, but a simple green salad alongside makes it a complete meal. Garlic bread if you’re not watching the carbs. A fresh-picked summer veggie would be great on the side, too.

This is one of those recipes that earns a regular spot in the rotation not because it’s fancy, but because it’s reliably good. The kind of thing you can throw together on a Tuesday night and feel good about what’s on the table. Give it a try the next time the zucchini takes over, or if the grocery store is having a sale on them, you’ll be glad you did.

INGREDIENTS

  • Ingredients
  • 2 medium zucchini about 2 pounds, sliced into ½” rounds
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 can mushrooms, drained chopped
  • 1 pound lean ground beef
  • 1 cup corn
  • 2 teaspoons Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 jar low sugar spaghetti sauce
  • 2 cups shredded mozzarella cheese

INSTRUCTIONS

  • Preheat your oven to 350°F.
  • Slice your zucchini, layer them on paper towels and then sprinkle with salt. Let them rest for 15 minutes, rinse, and pat dry. While that's happening, you can work on the meat sauce.
  • Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for about two minutes until it starts to soften. Add the minced garlic, drained mushrooms, and ground beef, breaking the meat up with a spoon as it cooks. Keep stirring until the beef is fully browned with no pink remaining for about five minutes. Stir in the sauce, corn, Italian seasoning, salt, and pepper, then take it off the heat.
  • Now for the layering. Spray an 8×8 baking dish with oil, and spread half of the beef mixture as your base. Arrange half of the zucchini slices over the meat, then top with half of the mozzarella. Repeat with the remaining beef, zucchini, and cheese.
  • Bake uncovered for 20 to 25 minutes, until the cheese is melted and starting to get those nice golden spots on top.
  • Let the casserole rest for 10 minutes before you cut into it. It needs that time to firm up a little so it actually slices instead of falling apart into a pile.
