Low Carb Spicy Cauliflower Casserole

Low carb and oh so tasty and full of lots of flavors can be found in this spicy cauliflower casserole.

I’m always looking for casseroles to serve Mr. G and myself and stay on a low-carb lifestyle. I was looking through some of my mom’s recipes and I found a cauliflower casserole that I knew I could change up to be low-carb. And since it was a casserole, this could be a two-night meal for us.

Low carb and oh so tasty and full of lots of flavors can be found in this spicy cauliflower casserole.

This recipe would also be great for the holidays or for any gathering. I also think anyone would love this recipe whether they are on a low-carb lifestyle or not.

I have changed out the meat in this recipe to whatever we happened to have and I have also doubled up on the meat. Sometimes it’s just bacon or ham or both. You could also use chicken. Yum! And you also don’t have to use the Monterey Jack Cheese since that is where the spice comes in. Monterey Cheese would make a great substitute.

Low Carb Spicy Cauliflower Casserole

INGREDIENTS
  • 2 lbs Cauliflower florets
  • 8 oz Shredded sharp cheddar cheese
  • 8 oz Shredded monterey jack cheese
  • 8 oz Cream cheese
  • 4 tbs Heavy cream
  • 2 bunches Green onion
  • 6 slices cooked and crumbled bacon
  • 1 clove Garlic minced
  • Salt & Pepper
INSTRUCTIONS
  • Prehead oven to 350 degrees
  • Microwave the cauliflower in a covered dish for about 4 mintues. Just enough for them to be tender.
  • Cream together the 6 oz cheddar, 6 oz Monterey Jack, cream cheeses and heavy cream together.
  • Stir in green onions and bacon.
  • Drain any liquid from cauliflower and add to cheese mixture. Stir until fully mixed. Add salt and pepper to taste.
  • Pour into a greased 9 x 13 dish and sprinkle the left over cheeses on the top Cover with foil and bake for 25 mintues. Remove the foil and continue to back until cheese is just turning brown and the casserole is bubbly.
NOTES
NOTE; You can substitute other meat for bacon or add several meats together. Ham and bacon make a great combination.
