One of the perks of living in Central Florida means I get to see the launches from the space center a few miles south.
I had the perfect backyard seat just a few miles north to watch the Artemis launch, with the NASA live feed playing in the background on my phone, my camera focused and ready to snap pictures, feeling like a VIP spectator. And then, right on cue, a single, dramatic cloud rolled in like it had ONE job. 😅☁️🚀
You couldn’t have timed it better if you tried. Florida skies were telling me, “Not today.” Still, there’s something kind of magical about seeing a small bit of it. Guess I’ll call it a suspenseful viewing experience 😂
DROUGHT: The whole state of Florida and other areas of the Deep South are in an extreme drought. Still. With no rain in sight! Historically, April and May are the driest months, but we were in a drought warning before April rolled around. Keeping my fingers crossed and saying a few prayers to get the skies to open up! 🙏🏻🌧️
UPCOMING TRIP: Even though I don’t like to fly as much as I used to, I know that I can’t wait to get to the destination. I have an upcoming trip to meet my son, and we are going to take a road trip around Louisiana. He wants to see New Orleans, and I want to visit a couple of other towns. The best part is, I don’t have to drive!! 🚙
ONE POT MARRY ME CHICKEN PASTA: In a large pot over medium high heat, cook oil from 1/2 cup oil packed sun dried tomatoes with 1 pound cubed boneless chicken, salt and black pepper to taste, and 2 teaspoons Italian seasoning until cooked, remove chicken; add 2 tablespoons salted butter, 2 cloves garlic chopped, and remaining 2 teaspoons Italian seasoning, cook 1 to 2 minutes, add 3/4 to 1 pound short cut pasta and 2 cups water, cook until al dente, stir in 2 cups whole milk, 2 ounces cream cheese, and 1/2 cup grated parmesan, return chicken with chopped sun dried tomatoes and 2 cups chopped baby spinach, remove from heat and stir in 1/2 cup chopped fresh basil, serve. Enjoy!

🐕🦺DIXIE UPDATE: She went to the groomers for the first time. Since she has several different types of fur, I wanted to see what she would look like with a trim all over. When I went to pick her up, she “pranced” out to meet me. 🥰 She must have felt so much better with a lot of that hot fur off of her. Then I saw the bows!! She looked so cute in them. Sadly, they only lasted until the next day. Since they were put on with regular rubber bands, they were all twisted in her hair. I had to cut them out. 🥲
🛋️FUN AND INTERESTING FACT: What food is healthier for you when it’s cooked? How do you get out of quicksand? Tomatoes, mushrooms, asparagus, and other veggies are better for us when cooked, but so is leftover pasta. When it is leftover and not fresh, it has more resistant starch, which is linked to better blood pressure control and gut health. Getting out of quicksand is actually easy. Lie on your back and keep your arms out of the quicksand. Wiggle your feet to propel you to the edge of the quicksand. Now you know.

What I’m watching, reading & listening to
📺 Started watching Dark Winds. I’m a little late on this one, but I’m hooked from the first episode. You will find it on Netflix, and it was produced by Robert Redford.
📺 I watched the Gone Girls: The Long Island Serial Killer the other day. I’m sure you have heard about this story, but having it laid out like it was in this short series really shows what kind of monster Rex Heuermann really is. I believe that if the police felt that lives were lost, then prostitutes’ lives were lost; there may have been fewer lives lost. A date for the trial hasn’t been set yet, and you can bet I will be watching that trial.

It must have been so exciting watching that rocket launch recently! I remember going to the Kennedy Space Centre on a holiday to Florida when I was a kid, and it’s an incredible place! These are lovely moments from April!

Watching the launch must have been so amazing! We watched the entire launch, everything related to the trip, and the return home.
Wow! How amazing to see Artemis launch, we watched it live on TV. My son was so excited. I must say I do love a bowl of leftover pasta – even better if it is good for me too!
I used to live in Florida a long time ago and like you I loved to go and watch the rocket launches. But this one must have been special – so cool. I think in our current times NASA and Artemis were like a glimmer of hope. Going to check out Gone girls – sounds like my kind of series.
Can I just say that Dixie is the cuttest dog I have ever seen? And the pink color works so well – easy to see how much Dixie is loved. =)

A trip with your son sounds like so much fun! I am back in the states visiting my family this week and it’s been rainy in New York! I love the idea of the one-pot marry me pasta. Delicious.
