Low Carb Spicy Tex-Mex Pizza

Enjoy this spicy tex-mex pizza without all the carbs but has all the great flavor. A favorite in our home.

The three things I love the most to eat are burgers, brownies, and pizza. Of course, all three of those are not low carb. But that doesn’t stop me from figuring out a way to enjoy all 3.

I knew I needed a crust to make this pizza and low-carb tortillas were the first thing that came to mind. My favorite ones called Fit & Active Tortillas come from Aldis. I’ve made the pizza crust with cream cheese and mozzarella cheese in the past, but frankly, it’s a bit too much work for me in the kitchen.

The rest of the ingredients most people would have on hand anyway. So lets get coming low-carb!

ingredients for this recipe
  • Crust – Low Carb Tortillas
  • Ground Beef
  • Shredded Monterey Jack Cheese
  • Shredded Sharp Cheddar Cheese
  • Taco Season (I make my own)
  • Can of Rotel Tomatoes
  • Chopped Green Peppers and Onions
  • Sliced Black Olives
  • Sour Cream and Guacamole for toppings, if desired

The picture above shows the order of how to layer the pizza:

  • Tortilla
  • Ground beef
  • Jalapeno Monterey Jack Cheese
  • Taco Seasoning
  • Tortilla
  • Drained Rotel tomatoes
  • Cheddar Cheese
  • Green Peppers
  • Onions
  • Olives

You could change out anything for this pizza but these are the basic tex-mex items to use.

I’ve also put thinly sliced lettuce and diced tomatoes on top before serving. A little guacamole and sour cream to top that off. It’s such a great meal.

Since the tortillas are round, I make this recipe in my trusty 10″ Lodge skillet. It really cooks up nicely and you can never go wrong using a skillet.

Mr. G asks for this recipe often and that tells me how much he loves it. He reminds me often that it doesn’t taste like I’m not eating that many carbs.

Low Carb Spicy Tex-Mex Pizza

INGREDIENTS
  • 2 Low Carb Tortillias
  • 1 lb Ground beef cooked and drained
  • 8 ozs Shredded Monteray Jack Cheese
  • 9 ozs Shredded Cheddar Cheese
  • 1 tbsp Taco seasoning
  • 1 can Rotel Tomatoes Drained
  • Chopped Green Peppers and Onions
  • Sliced Black Olives
  • Shredded lettuce, diced tomatoes, sour cream and guacamole for toppings
INSTRUCTIONS
  • Set the oven at 400 degrees
  • Using a 10” skillet, lay your ingredients in this order: Tortilla, Ground beef, Monterey Jack Cheese, Taco Seasoning, Tortilla, Drained Rotel tomatoes, Cheddar Cheese, Green Peppers, Onions, Olives. A little more cheese on top, if desired.
  • You can also add a bit of queso sauce over the ground beef for a little more flavor.
  • Bake for 30 minutes.
  • Let set for a few minutes before cutting slices.
  • Add shredded lettuce and diced tomatoes on top, if desired.
  • Serve with sour cream and quacamole.
