My Favorite Low Carb Bread and Biscuit Recipe

My favorite low-carb bread and buns and a recipe for mouth-watering biscuits you will love to make often.

One of the things you have to give up being on low-carb is bread. I wasn’t a big bread eater, but I did love it every once in a while. I mean, who doesn’t love a good sandwich or a piece of garlic bread smothered in garlic butter toasted straight from the oven?

I’ve tried baking my own low-carb bread but wasn’t successful at all. So, I started looking for loaf bread products in my local grocery store and found Sola bread products.

Not only do they have loaf bread, but also hamburgers and hotdog buns. I have been missing a good bun on my burgers for so long now. I actually squealed a bit when I saw them in the freezer department at my local store. They are so good! If you miss bread as much as we did, give Sola a try.

TIP: I add a bit of olive oil or butter on the inside of the two pieces of the bun and toast them under the broiler or on the grill. That really makes them extra special good to eat.

But, before I found out about Sola products, I was making a Low-carb biscuit that even bread-picky Mr. G even loves.

The recipe is really easy to mix and there are many ways to add different flavors to them. I am posting the basic recipe, but you could add some chopped-up bacon, a different cheese in exchange for cheddar, or add dry or liquid Ranch dressing to the mix. Make it your own!

The recipe will make 10 biscuits and I use a 10″ skillet for baking. Seems they will get a nicer crust in a cast-iron skillet. I use a large cookie scoop to place them in the skillet since the mixture is a bit wet and this will make nice biscuits the same size.

I will also make this recipe, use a cookie scoop to place them on a baking sheet, put the batch in the freezer, and then store them in a freezer bag until needed. The reason I do this is that the two of us don’t eat 10 biscuits in a couple of days, so I will pull out 3 biscuits and bake them in my small 6.5″ skillet. That’s perfect for one meal for us. Mr. G loves 2 of them with his meal.

TIP: Be sure that all the ingredients are at room temperature before mixing.

The recipe calls for the biscuits to be placed in the fridge for a few minutes before you bake them and this is a step you don’t want to skip over. So letting them thaw a bit from the freezer is actually perfect for this recipe.

When I take them out of the oven I will add garlic butter or just plain butter on top. That will put them over the top.

Low-Carb Biscuits

My favorite low-carb bread and buns and a recipe for mouth-watering biscuits you will love to make often.

INGREDIENTS
  • 4 oz cream temperature room temperature
  • 2 cups shredded mozzarella cheese room temperature
  • 2 tsp baking powder
  • 3 eggs room temperature
  • 1 1/2 cups fine almond flour
  • 1 cup shredded cheddar cheese room temperature
INSTRUCTIONS
  • Preheat oven at 400 degrees.
  • Microwave cream cheese and mozzarella cheese on HIGH for 1 minute in a microwave-safe bowl. Stir until smooth.
  • Add baking powder, eggs, and almond flour to the cheese mixture. Stir well.
  • Stir in cheddar cheese and stir until combined.
  • Spray skillet with cooking spray. Using a large cookie scoop, place biscuit balls in skillet. Place in fridge for 10 minutes.
  • Remove from fridge and bake for 20 to 25 minutes. Brush butter on cooked biscuits.
NOTES
You can also add cooked chopped bacon, Ranch dressing, or substitute a different cheese for cheddar. Add these items after the 3 eggs have been stirred into the batter.
