Chicken Avocado Quesadilla

The big game is this weekend and I will be making Chicken Avocado Quesadillas for the crowd. Easy to make and good!!

Its my hubby’s birthday and I love to fix all his favorite dinners all week long.  We call it Birthday Day Week!  I’ve got his favorite dessert in the oven and oh my it smells so good and I will be making his favorite dinner tonight.  Even though he is a southern man, he loves Mexican food.  Especially my Chicken Avocado Quesadillas.

We both laugh every time I tell him I am going to make these because hubby can’t seem to say quesadilla very well.  But, he doesn’t care how to say it, just brings them to the table.

For years I used to make it without avocado and I had one that was getting pretty ripe, so I decided to put it in the sauce.  He never noticed anything different.  I love sneaking goodness into his food.  The avocado really adds a creaminess to the sauce.  Avocados from Mexico are available all year round.

And these are perfect for the football parties we have.

Chicken Avocado Quesadilla

Simple ingredients really make this dinner or appetizer easy to make. An Old El Paso soft taco kit from my local Publix, cheddar, and Monterey Jack with Jalapenos cheese, shredded chicken, and the sauce. The chicken is mixed with the packet of taco seasoning which comes with the kit.

The sauce is what really brings this all together and you will find the recipe below.

Chicken Avocado Quesadilla

I always make an assembly line near the stove and I highly suggest a nonstick pan for this. I do mist the pan with olive oil after each quesadilla is made. Start with the sauce all over the soft flour shells. The chicken and cheese only go on half the shell as you can see in the picture below.

The stove is on about medium-high and I let it sit there for a minute or two.

I flip the empty side of the taco shell over the half with the chicken and cheese. I then take a spatula and press down a bit on it so the cheese will stick to the shell and hold it together.

After a minute or two, I flip it over and let the other side brown. This process makes it nice and crispy.

I take each quesadilla and cut it in half to serve as an appetizer or you can leave it whole for a dinner meal.  Serve with sour cream and the taco sauce included in the kit.

Chicken Avocado Creamy Sauce

INGREDIENTS
  • 1 ripe avocado cubed
  • 1/4 cup mayonnaise
  • 2 tsp minced jalapeno slices
  • 2 tsp jalapeno juice
  • 3/4 tsp sugar
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/8 tsp cayenne pepper
  • 1/8 tsp garlic powder
INSTRUCTIONS
  • Smash avocado in a bowl. Add other ingredients and stir well together. If its not creamy enough, add a bit more mayo.
