Preheat oven to 350 degrees and spray a 9 inch pie pan or cast iron skillet.
Brown ground beef over medium heat. Stir in taco seasoning. Transfer to prepared pie pan or skillet. Sprinkle Rotel tomatoes on top.
In a large bowl, whisk eggs, cream garlic, salt and pepper. Pour over beef.
Sprinkle on top with chesse and bake for 30 minutes or until the center is set and a bit brown. Remove and let sit for a few minutes to set. up. Slice and serve.
