Yummy chickpea salad recipe with a Mediterranean flavor you will want to make over and over! Great healthy lunch or easy side dish that keeps well.

Ingredients
Salad:

Chickpeas

Parsley

Chopped Bell Pepper

Grape Tomatoes

Black Olives

Feta Cheese
Dressing:

tbsp
extra-virgin olive oil

tbsp
plain yogurt

tbsp
squeezed lemon juice

tbsp
red win vineager

small garlic minced

ground cumin
salt and pepper to taste
Instructions
In a large bowl, toss together the salad ingrediants.
In a smaller seperate bowl, whisk together the dressing ingrediants.
Drizzle the dressing over the salad mixture and refrigerate until ready to serve.
Notes
NOTE: You can substitute black olives with kalamata olives.
