I tried regular sausage, but the Italian version, which is readily available in stores, makes a big difference. Instead of using regular canned tomatoes, I used Rotel tomatoes for another flavor kick. Every spoonful delivers a taste of Italy, making this soup a feast for the senses.

I know the biggest question is how am I using pasta in this recipe? I use Kaizen’s low-carb pasta. It has that lovely pasta texture that we all crave being low carb. The creamy base is achieved using heavy cream and parmesan cheese to help thicken the base.

Simple Ingredients

One of the best things about this recipe is it’s simple to make with simple ingredients. You don’t need an extensive list of ingredients to create something amazing. Here’s a quick overview of what you’ll need:

  • Italian sausage (mild or spicy, depending on your preference)
  • Garlic and onion for a flavorful base
  • Low-carb pasta (I use Kaizen low-carb pasta)
  • Chicken broth for richness
  • Heavy cream and parmesan cheese for creaminess and thickness
  • Italian seasoning, salt, and pepper to taste

INGREDIENTS
  • 1 lb Italian sausage
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 can Rotel tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup low carb pasta
  • 1 cup parmesan cheese shredded
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • salt and pepper to taste
  • parsley chopped
INSTRUCTIONS
  • Add the Italian sausage to a large pot, breaking it up while it cooks until browned.
  • Add the diced onion to the pot and cook until it is translucent for about 3-4 minutes. Add garlic and stir in the mixture.
  • Stir in the diced tomatoes, chicken broth, dried basil, and dried oregano. Bring the mixture to a boil.
  • Reduce the heat to medium-low. Stir in the heavy cream and cook for a couple of hours or more. When you are about ready to serve, add the pasta to cook in the soup for a few minutes until tender.
  • Right before serving, add the cheese and stir well into the mixture to help thicken the soup.
  • Sprinkle the parsley on top before serving.
