Blueberry Oatmeal Breakfast Muffins are perfect for not only a quick and hearty breakfast but also for an after-school snack and are made with no flour.

Ingredients
2eggs
1/4cupcanola oil
1cuppacked brown sugar
1/2cupof applesauce
1 1/2cupsmilk
2tspvanilla
1/2tspsalt
1tbspcinnamon
3cupsold-fashioned rolled oats
2tspbaking powder
Blueberries or your favorite toppings
Instructions
Preheat oven to 350 degrees. Line muffin tins with your favorite liners.
Whisk together in a large bowl, eggs, oil and brown sugar until dissolved. Add the applesauce, milk, vanilla, salt and cinnamon and mix until well combined. Stir in oats and baking powder.
Fill muffin liners about 3/4 full. Add your favorite toppings to each muffin and push down just a bit so they don't fall off during baking.
Bake for 30 minutes. Let cool before storing in a container. May also be stored in the freezer.
Notes
Liners are a must for this recipe. You could also add some nuts to the mixture. I also used soy milk instead of dairy milk.
