Microwave cream cheese and mozzarella cheese on HIGH for 1 minute in a microwave-safe bowl. Stir until smooth.
Add baking powder, eggs, and almond flour to the cheese mixture. Stir well.
Stir in cheddar cheese and stir until combined.
Spray skillet with cooking spray. Using a large cookie scoop, place biscuit balls in skillet. Place in fridge for 10 minutes.
Remove from fridge and bake for 20 to 25 minutes. Brush butter on cooked biscuits.
Notes
You can also add cooked chopped bacon, Ranch dressing, or substitute a different cheese for cheddar. Add these items after the 3 eggs have been stirred into the batter.
