Monday Moments with Spring Food
The air is crisp and clean, the “Curse of the South Yellow Pollen” has slowed down, spring cleaning has begun and my garden is busting with spring veggies. I love making meals which are lite and maybe no cooking involved. Here are a few I found which I must try.
I love omelettes of any kind and The Seasoned Mom’s version of a Spring Baked Omelet looks so good. This is the perfect recipe for left over ham from Easter dinner with peas and asparagus. All spring veggies.
And whats Spring without a yummy salad. Gimmie Some Oven has an outstanding recipe called Avocado Strawberry Salad which is full of spring spinach. If you have spinach growing in your spring garden now, this would be the perfect salad to make.
I have never used rice paper wraps before, but this recipe has inspired me to do so. Sally’s Baking Addiction’s recipe using rice paper wraps is called Homemade Fresh Spring Wraps full of crispy and crunch veggies. I can see having these for lunch everyday.
And lets not forget Mason jars to hold salads. Spinach and Bacon Mason Jar Salads is the perfect idea for a picnic or lunch to take to school or work. My Recipe Magic has the perfect recipe for this.
