Monday Moments with Cool Pasta Salads

Its so hot!!!  And who wants to cook in this heat?  I know I don’t.  I started looking for some summer time cool pasta salads to make during the summer to always having in the fridge.  I can make a meal out of these or serve with some yummy BBQ.  I can’t wait to try these.

I jumped on this recipe because I love Reuben Sandwiches.  But a Reuben pasta salad??  This version comes from Cook, Crave, Inspire and with simple ingredients, I know this one will be a hit.

With fresh tomatoes abound right now, how about a BLT Pasta Salad?  I know my hubby will love this one by Life in the Lighthouse.  I can see this as a side with a good burger.

One of my favorite salads to eat is a Greek salad.  Gimme Some Oven shows us how to make a Mediterranean Pasta Salad with some of summers veggies.  I love the bow tie pasta. Tossed with a simple vinaigrette dressing, this is so light for a summer hot day.
