I have looked high and low for something that is really tasty and satisfying when it comes to low carb for a snack. Haven’t had much luck at all until now. These low-carb sausage balls are a game-changer. They’re easy to make, packed with flavor, and perfectly fit into your carb-conscious eating plan. Whether you’re prepping for a party, looking for a quick breakfast option, or just craving a savory snack, sausage balls are a versatile dish that won’t disappoint.

Traditional sausage ball recipes often rely on flour or baking mix to bind the ingredients together, which can quickly rack up the carb count. In this low-carb version, almond flour takes the place of flour, keeping the texture light and fluffy. You’ll also need ground sausage, shredded sharp cheddar cheese, and cream cheese. A sprinkle of baking powder helps the balls puff up slightly, and that’s basically it.

The best way to mix this all up is to use what God gave ya. Your hands. You could probably use a stand mixer, but I don’t have one of those to try out to see how well it works. It should look like the mixture above when finished. Having all the ingredients at room temp really makes a difference when mixing and baking.

Grab a large cookie sheet and parchment paper for this recipe. You could just use baking spray on the pan, but parchment paper makes for easy cleanup. And I am all about easy clean up in the kitchen. I use a small cookie scoop (one of my fav kitchen gadgets) and all of them will end up a nice size and you won’t have to roll them up with your hands.

These sausage balls are not only great for snacks, but they can also be made ahead of time for easy meal prep. Store them in an airtight container in the fridge for up to five days, or freeze them for longer storage. They reheat nicely in the microwave for a few seconds. They’re great for breakfast on the go, as a party appetizer, or even as part of a low-carb lunch. These are my go-to lunches most days and 3 of them are one serving.

INGREDIENTS
  • 16 oz hot ground sausage
  • 1 cup shredded sharp cheddar cheese
  • 4 oz cream cheese
  • 1/2 tsp salt
  • 1/2 tsp baking soda
INSTRUCTIONS
  • Preheat oven at 400 degrees. Prepare your cookie sheet with parchment paper or spray with baking spray.
  • Combine all ingredients in a bowl and mix well. Your hands do the best in combining the ingredients.
  • Bake for 15-20 minutes until cooked through.
