Dixie

Everyone, let me introduce you to Miss Dixie! My new furbaby, I rescued from the local shelter.

I have been looking online at local shelters and private rescues for a while now, since Mr. G passed. I found myself needing a companion, and I thought a little furbaby would be my solution.

I had filled out so many adoption forms with no luck. Either my form came in right after the pup was adopted, or I didn’t hear anything. I was about to give up when I saw Miss Dixie’s picture on Petfinder.com. I filled out the form and was called the next day! She was surrendered by an elderly couple who couldn’t take care of her anymore. She is the sweetest little thing and just loves to be at my side all of the time.

Life seems so good now! Miss Daisy and I are looking forward to our future together. I can’t wait to share all the fun we are going to have.

Strawberry Cake – Preheat the oven to 350°F. Grease and lightly flour a 9-inch round cake pan. In a large mixing bowl, cream together 1/2 cup (1 stick) unsalted, softened butter and 1 cup sugar until light and fluffy. Add 2 large eggs. Stir in 2 teaspoons vanilla and 1/2 cup sour cream until smooth. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 1/2 teaspoons baking powder, and 1/2 teaspoon salt. Add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in 1 1/2 cups fresh chopped strawberries. Pour the batter into the pan. Top with 1/2 cup halved strawberries, cut side down. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely. Serve!
