I’ve learned that being on a low carb lifestyle doesn’t mean that food doesn’t have to be bland and not taste good.

I have to say that I am a salad snob. I want my salad to be fresh with lots of flavor and pretty to the eyes. This salad is all three of those things.

Some would think this is a summer salad, but we love it all year long. And the ingredients are perfect for a low-carb lifestyle and can be found most of the year in the stores. Broccoli, cauliflower, bacon, cheese, and a creamy dressing. It all works perfectly together. This recipe makes a large bowl full. Great for another day or lunches.

Be sure to buy really fresh broccoli and cauliflower. You gotta have that crunch! The bacon I use is the Hormel brand from Sam’s that’s already cooked. All you have to do is heat it up to get that crunch.

I love serving this salad with burgers and our low-carb bread. But we also love it with stir-fried Turkey Smoked Sausage with onions and garlic. There are several brands that offer this type of sausage. It was a long time before Mr. G realized it wasn’t real pork sausage. 😉

Serve this salad at your next gathering and see if anyone realizes its low carb. That bacon just put the flavor of this salad over the top. Don’t you love my vintage Pyrex bowl? I have a few of these which were passed down and use them often. The bowl above is the Cinderella Pattern circa 1957.

Low Carb Broccoli and Cauliflower Salad

INGREDIENTS

Salad

  • 1 head broccoli chopped fine
  • 1 head cauliflower chopped fine
  • several slices of bacon cooked and chopped
  • 1 cup shredded cheddar cheese
  • 1 small onion chopped

Dressing

  • 1 cup mayonnaise
  • 1/4 cup Swerve granulated sugar
  • 4 tbsp red wine vinegar
INSTRUCTIONS
  • Mix all the salad ingredients in a bowl. Whisk together well all the dressing ingredients. Pour dressing over salad, mix well and let stand in the fridge till cool.
NOTES
NOTE: Any low carb sugar will work in this recipe
