Easy Low Carb Meatballs

When I started eating low carb, I knew I would have to change some of my favorite meals to fit that bill. Meatballs were certainly one of them.

But what about the pasta? Honestly, when you make these meatballs with a yummy sauce on top, you don’t really miss the pasta. You could serve this over Spaghetti Squash, but Mr. G and I are loving our meals without all those filling carbs.

You could use different meats for this recipe. Ground turkey, sausage, and beef are the obvious choices. But, most of the time I use just plain ground beef. Adding sausage does make the meatballs have more flavor.

So lets get to it!

I just throw all the ingredients in one bowl and mix together with my hands. Hands make the best mixers for sure.

I line a sheet pan with foil for easy clean-up and use a small cookie scoop to form meatballs. Roll each meatball between your hands to get a nice ball shape. Using the cookie scoop is the easiest way to get the same size meatballs for even cooking.

Bake at 400 degrees for about 20 minutes. I then add my favorite low sugar spaghetti sauce to a pan with a lid and add the meatballs one at a time to the pan to simmer in the sauce. Cover with a lid and let simmer for several minutes on medium heat which gives me time to make a salad for the side.

Easy Low-Carb Meatballs

Baked low-carb juicy meatballs covered in your favorite low-carb sauce are so flavorful and tender. The perfect comfort food.

INGREDIENTS
  • 1 pound ground beef
  • 1/4 cup Parmesan cheese
  • 1/4 cup heavy cream
  • 1 large egg
  • 2 tbsp minced parsely
  • 1 tbsp grated onion
  • 1 clove minced garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
INSTRUCTIONS
  • Add all the ingredients in a bowl and mix with your hands. Make sure all the ingredients are mixed well together.
  • Line a sheet pan with foil.
  • Using a small cookie scoop, make meatballs and place them evenly on the sheet pan.
  • Bake at 400 degrees for about 20 minutes.
  • Add sauce to a pan that has a lid. Then add the meatballs one at a time. Place lid on top and let simmer for several minutes on medium heat.
NOTES
You can use 1/2 ground beef and 1/2 sausage or 1/2 turkey meat. Sausage does add a lot more flavor to the meatballs.

  3. These meatballs sound delicious. We sometimes make them with minced pork or a combo of pork and beef. The meat used really can change the flavour around so much. I must try your version x5 stars

  5. Yum, you are making me hungry now. These meatballs look so good I’ve never tried making homemade meatballs before but the ones in the freezer section don’t always taste well. I can’t pinpoint why but I’m assuming they use more panko or flour in the meatball as filler.5 stars
