Easy Low Carb Egg Bites

These quick and really super easy egg bites are perfect for a meal or a quick snack during the day. Make ahead for a quick morning breakfast meal.
Egg bites are simply little quiches and are perfect for low-carb lifestyles. I actually love these with a piece of Sola toast with almond butter and berries on the side for lunch.
They are made with veggies, cheese, and meat to your liking. There are endless ways to make these little bites. Whatever you like in your eggs you can pretty much throw in egg bites. I love 2 kinds of cheeses, bacon, onions, and tomatoes. I have put spinach and kale in the mix when it’s in season and is a really good healthy addition.
I normally prepare everything to put in the muffin tin to start layering. I start with the cheese and then layer everything else. Lastly, I will add the egg mixture on top of that.
Baking Tip
It’s very important to be sure to spray your muffin pan with a nonstick spray or these will stick. Especially after letting them cool completely to store.
One thing to remember is to not fill each cup to the top edge with fillings before you pour in the eggs. I fill them up with fillings about 3/4’s full and then add 1/4 cup of egg mixture which fills the cup and leaves a small space at the top.
I love to make a couple of batches of these egg bites to put in the freezer for later. After the bites have cooked and completely cooled, I will lay them on a cookie sheet and then set them in the freezer until frozen. I will then transfer them to a freezer bag to store. I will reheat them for about 1 minute and then check to see if I need to heat them for a few seconds longer. To reheat from the fridge, it only takes 30 seconds in the microwave.
Easy Low Carb Egg Bites
INGREDIENTS
- 1 tomato, diced
- 1/4 cup onion, diced
- 4 strips bacon
- 1/4 cup cheddar cheese
- 7 large eggs
- 1/4 cup milk
- salt and pepper
INSTRUCTIONS
- Preheat oven at 350 degrees.
- Spray muffin tin with nonstick spray.
- In a bowl mix the eggs, milk, salt and pepper.
- In each muffin slot, add cheese, tomatoes, bacon, and onion. Use a 1/4 measuring cup, pour egg mixture over each slot leaving a little space at the top.
- Bake for 20 minutes. Check to see if the middle of each egg bite is done.If not fully cooked return to the oven for about 3 minutes more.
- Let egg bites cool completely before storing.
