Cook sausages in a large skillet until there is no longer pink and the sausage crumbles.
Using a grater or food processor with a grater blade, grate 30 ozs of potatoes. Place in a microwavable bowl. Add half of the salt and all of the pepper and cook for a few minutes. Just until the potatoes are getting soft.
Stir together sausage, potatoes, and cheese. Pour into a 9 x 13 greased baking dish.
Whisk together eggs, milk, and remaining salt. Pour evenly over potato mixture
Bake at 350 degrees for 35 to 40 minutes
MY SUGGESTIONS: You can use 1 30 oz bag of frozen hash browns. I will also use turkey sausage.
