Monday Moments with Hearty Casserole Dishes

I love making casseroles for Mr. G and me for our dinners. We both love leftovers and casseroles are the dishes for that. Well, unless you have a large family or plan on taking your casserole to a gathering. The heartier, the better is what I say. Something quick and easy to make ahead of time and pop in the oven when you get home from work. Here are a few of my favorites of hearty casserole dishes.

Mexican style casseroles are always a big hit and this recipe by Can’t Stay Out of the Kitchen is no exception. A classic Taco Bake will have them running home for dinner.

Sugar and Spice Gals have another Mexican flavored casserole called Creamy Pepper Jack Enchilada Casserole. I LOVE pepper jack cheese and I bet this has a nice spicy flavor to it.

One of my favorite food blogs to go to is Plain Chicken. She has some really tasty recipes and I have made her Ham and Cheese Hash Brown Casserole before and it’s outstanding. Actually, I have made it several times. Mr. G asks for it often.

Last but not least, the classic Cheesy Hamburger Casserole. Who doesn’t love that combination for a hearty meal? Flavorite has this yummy recipe.

  1. I love casseroles too, Tammy. Thanks so much for these recipes. Pinned! I’m really trying to cook more lately. As of today, I’m giving up sugar (again 😉 ). So these comfort food recipes will serve me well. I think I’ll start with the cheesy hamburger one.
