Oh my goodness!!Â When it comes to cooking, I want it to be as simple and quickly as possible.Â I don’t mind the cleaning up part, I just don’t like to cook that much.Â And I hate when I ask my wonderful hubby what he wants for dinner and I always hear, “I don’t care.”Â
So, I start looking for really good and simple recipes that I know he would enjoy and maybe have enough leftovers for the next meal.Â I love to stretch my dollar.
One place I use that has wonderful recipes is Recipe4Living.com.Â Wonderful articles and recipes and I always stop by Campbells recipes to get their recipes. You can make a really, really good meal with a few ingredients and a can of Campbells soup. And you know their soups are a great value too!
This is one recipe that is a hit with my husband because it has all the things he loves to eat.Â Meat, gravy and cornbread.Â Serve it with a salad and you haveÂ a great meal.

Here’s the recipe:
Beefy Cornbread Casserole
- 1 lb. ground beef
- 1 can (about 15 oz.) red kidney beans, rinsed and drained
- 1 can (10 1/4 oz.) Campbell’sÂ® Beef Gravy
- 1/2 C. barbecue sauce
- 1 box (about 8 oz.) corn muffin mix
Heat the oven to 375Â°F. Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off any fat. Stir the beans, gravy and barbecue sauce in the skillet.
Pour the beef mixture into a 2-quart shallow baking dish. Mix the corn muffin mix according to the package directions. Drop the batter by spoonfuls onto the beef mixture. Bake for 25 minutes or until the topping is golden brown.
