When my father had his heart attack back in the early 80’s, he had to learn how to eat all over again and my mother had to learn how to cook all over again. We are from the south and that means tons of lard (at that time) and fry, fry, fry everything!
One of the things my dad learned was he had to get rid of all the lard and Crisco shortening. Crisco had Palm Oils in it and the lard, well, I think we all know what that is. The doctor told him to immediately switch to olive oil for any kind of dressing, baking or cooking process. The health benefits are out of the roof and it helped to lower his bad cholesterol quite a bit.
As the years went by and we all struggled to learn how to eat and cook again we learned about different olive oils and what worked best. I love the taste of olive oil now and its a mainstay in my pantry and is used in all my cooking. No more vegetable oil for my family anymore. I don’t want to live the majority of my life on meds or worse, have a heart attack and suffer the consequences with that.
